The AlCrSiN deposition reduces the use of the K340 metallic and improves its sliding properties, rendering it a promising means for prolonging the solution life of metalwork tools.This study assessed the colour improvement via zinc protoporphyrin IX (ZnPP) development in nitrite-free, dry-cured sausages processed using five types of ZnPP-forming lactic acid bacteria (LAB). The ZnPP items and shade strength associated with the sausages along with other technological properties were examined during the handling of sausages. LAB matter and acidity significantly increased in the parallel medical record LAB-inoculated sausages set alongside the control group.
